I've been to the world finals in Dallas multiple years and it has turned into a boring "competition" that the people in the room barely watch, and most of them work for Friday's! Each bartender gets 8 minutes and they spend about 6 of those shaking hands, passing out menus, suggestive selling and talking up the judges. They still do some flair, but it's been really downplayed. It's really affected the competitive level as well. I haven't competitively flaired in over 6 years and every year I feel like I could walk up on stage with no practice and out-flip everyone in the comp except maybe the guy who wins. It seems to be a continuing trend of losing their bartending culture and heritage. They've sterilized their bars through remodels and now their sterilizing their flair bartenders. The drinks are better though. Have to give them that.

I totally agree with you on this. I work at a Friday's in Beavercreek Ohio. The judging seems to be more about the all around bartender, which is fine, but when I have some moves I can show off to just get 10 points for? It's frustrating. Thanks for the article, loved it. Keep flipping.
